VARIETAL: 100% Pinot Noir
VINEYARD: Chalky soil, full of stones and rocks. Windy and rainy weather characterizes the climate in the village of Savigny.
WINEMAKING: Harvest made by hands. Traditional vinification with indigenous yeasts. Long maceration (15 days) at controlled temperature in order to make the tannins extremely soft. Part of the grapes are kept in french oak barriques for few months. Bottled without filtration.
TASTING NOTES: Very elegant, fruit forward with red fruits and soft tannins. Round and incredibly smooth.
FOOD PAIRINGS: Perfect pairing with beef, lamb or french cheeses.
