VARIETAL: 100% Pinot Noir
VINEYARD: Extremely chalky, orange soil. Lots of rocks leave very little space to the vines but give a beautiful minerality tone.
WINEMAKING: Harvest made by hands. Traditional vinification with indigenous yeasts. Part of the grapes are kept in french oak barriques for few months. Bottled without filtration.
TASTING NOTES: Very nice and fruit forward, soft tannin, round and incredibly smooth. Hautes-Cotes de Beaune can be enjoyed young and also after aging in bottle for several years.
FOOD PAIRING: Perfect pairing with beef, lamb or french cheeses.
