WINEMAKING: Grown in clay and limestone soil, hand-harvested and fermented in stainless steel for 30 days. Refined by sur lies for 4 months, aged 5-10 months in-barrel, and at least 2 months in-bottle
TASTING NOTES: Extremely fresh and pleasant. Acacia blossoms, peach, and apple. Full, persistent with hints of almond. After a few years in bottle, it shows an interesting evolution
FOOD PAIRING: Recommended as an aperitif, with cheeses and all fish-based dishes
